Chili Seared Steelhead Trout

Ingredients

4 Steelhead Trout Fillets, 4 – 6 ounces each

½           Cup                      Brown Sugar

1 ½        Tablespoon         Chili Powder

1            teaspoon              Kosher Salt

½           teaspoon              Fresh Ground Black Pepper

¼           teaspoon              Ground Cumin

Instructions

1.     Combine brown sugar and spices to blend.

2.     Rub sugar bland evenly over fish fillets. 

3.     Bring a heavy bottom skillet or cast iron pan to medium-high heat.  Sear fillets on both sides, about 3 minutes per side or until just flakey. 

Pineapple Salsa

Ingredients

2            Cups                    Diced Fresh Pineapple

2            Tablespoon         Red Onion, Finely chopped

2            Tablespoon         Red Bell Pepper, finely diced

1            Tablespoon         Fresh Cilantro, Chopped

1            each                     Fresh Jalapeno Pepper, seeds removed, finely chopped

2            each                     Fresh Lime, juice only

2            teaspoon              cider vinegar

1            teaspoon              ground cumin

Dash                                   kosher salt

 

                            

Instructions

1.     Combine all ingredients to blend.

2.     Allow to stand in refrigerator overnight.
