JACKSONVILLE, Fla. – Every week News4JAX teams up with the Blue Zones Project Jacksonville to show off local, healthy food options as part of our Fresh Finds series.
Chef Kalin Anderson from Feedtheville joined us on The Morning Show on Wednesday to share a heart-healthy recipe for chilled vermicelli salad.
Anderson wants people to see the city of Jacksonville through his culinary creations and feel a deeper sense of community through food.
Anderson explained that vermicelli noodles, like the one in his recipe, are a low glycemic index carb, which is better for that with high blood sugar, and they are fat and cholesterol-free, which makes them healthier for your heart.
Recipe: Chilled Vermicelli Salad (makes 4 cups of cooked noodles)
You will need:
1 cup halved Cherry Tomatoes
1 cup Sliced baby or Regular cucumber
1/2 cup of Red Bell Peppers
1 cup Shaved Carrots (Strips)
1/2 cup Shaved Onions or Pickled Onions
1/2 cup cilantro and Thai basil lightly Chopped
1/4 cup chopped Scallions
Fried Garlic & Shallots
Package of vermicelli noodles
Sauce
1 Cup of Sweet Chili Sauce
4-8 dashes of fish sauce
1/2 cup soy
1/4 cup minced garlic
1/4 cup lemon juice
1/2 cup of honey
Optional (dash of hot sauce)
**Sesame oil
Instructions
- First, wash ALL the veggies
- NOTE: For best noodle preparation, follow the instructions on the packaging
- Once all ingredients, including the noodles, are prepped and set aside, the noodles should be chilled or rinsed to room temperature in a medium to large bowl
- Once the noodles are chilled, add all the veggies to the bowl, then add the herbs and scallions.
- Lastly, add the sauce and mix together gently
- NOTE: Recipe is for 4 cups of cooked noodles
